We have always cared deeply for the health and well being of our staff, guests and the community so we have decided that it is time for Fujimamas to become a Smoke Free restaurant. Smoke free restaurants are much healthier for staff, and other non smoking guests. Please be advised that we will make this change from Friday August 1^st. (We can still provide smoking space for parties of 45 or more when booking out a whole floor of the restaurant)

Cheers! another successful Wine School

This past Saturday we hosted our 5th ‘Saturday Wine School,’ We had a great turn out and it was a very interesting topic. This time we discussed and tasted 4 interesting white varietals. Pinot Blanc, Viognier, Roussanne, and A Dessert wine. Jan Nelson, our instructor from Orca-International did an excellent job as always. we had over 40 attendees and expect to have 50 at our next wine school on Nov. 17th. Our next topic will be Sparkling Wine for the holidays! What’s the deal with wine points, anyway?

Wine spectator, various books, writers, and magazines all have developed scores, points or stars for wine. I have always been suspicious of these systems. Today I read an interesting bit on the BKWine Blog.

Wine points pointless?

the question certainly has a point. Yes, it can be interesting and â€œconvenientâ€? with wine ratings sometimes. But in many ways it is unfair and unjust to reduce a wine to a simple score. Because you canâ€™t really rate a wine with a number. Read for example in the WSJ article about the wine that once had a top score in the Wine Spectator and a bit later only had a very moderate score. The same wine. What had happened? Nothing really. And you should certainly not blame the WS and say that they are incompetent wine judges. Itâ€™s just that you simply can â€œrateâ€? (or taste) a wine differently at different occasions. On top of that, different persons have different tastes and appreciate different wines. Some like Burgundy and others like Amarone. Some like elegance others prefer structure. And Parker does not have the same taste as Jancis (Robinson) who does not have the same taste as (Hugh) Johnson who does not have the same taste as BKWineâ€¦

More tips from my Food Lover’s guide

Another great food lesson from My Food Lover’s Tiptionary- one of my new favorite fun foodie books. One item on the menu at fujimamas that many of our guests don’t know or are unsure of is BOK CHOY- After consulting the tiptionary- here is a basic run-down of Bok Choy…

Bok CHoy aka Pak CHoy or Chinese White Cabbage- mild leafy veggie, should have firm white stalks with leafy green crispy leaves. Great for stir fry, but doesn’t need to be cooked long at all. Actually best when cooked with a light touch. Also can be eaten raw in salads. Baby Bok CHoy is the young version of this Veg. See the photo at right for some nice proper Bok Choy! and here is a nice easy bok choy recipe to try at home. Bacon-y Bok Choy.

Food News about Mac Nuts on the Big Island

Fujimamas has our two sister restaurants over on the Big Island of Hawaii- so we watch food and beverage news over there closely- turns out it has been a good year for Mac Nut Growers on the Big Island…

ML Macadamia Orchards, the Big Island macadamia nut growing partnership, is reporting higher mac nut sales both for the full year and fourth quarter of 2006 compared to the previous year.
Hilo-based ML Macadamia (NYSE: NUT) reported Friday that macadamia nut sales rose almost 5 percent to $13.3 million in 2006 from $12.7 million in 2005. In the fourth quarter alone, the company reported $7.6 million in mac nut sales compared to $7.2 million the previous year.

Plate peeves: Diners sound off

Read this dallas based piece on guest’s pet peeves at restaurants. As a restauranteur I found it interesting and plan to share it with my staff in training sessions. The whole piece is worth a read, and I certainly sympathize with many of the diner complaints. I felt good that most of these things would not happen at Fujimamas, but it is always a good thing to remind ourselves how to look at things from the perspective of our guests.

Farm to Fork

Fujifarms, is just down the road from our newest up-coming restaurant HULI SUE’S BBQ and GRILL in Waimea Hawaii! Tonight we had a pre-opening tasting for a few folks. Testing out, and practicing before our upcoming Opening. I was helping out at the event, and got to sample some of the wonderful new menu. You could really taste the Fork to Farm taste of our wonderful greens in the new recipes for Huli Sues from our own Farm!

Homemade, rich flavors, Fun style, comfortable restaurants. Huli Sue’s and Fujifarms as well as our Fujimamas in Tokyo and Kona- are all places that simply celebrate good food from great ingredients.
